Here’s a scintillating recipe for hash that can be cooked in a casserole dish; I’ve found a larger casserole dish tends to yield the best results. This recipe is great if you have leftover meat, even if it’s not the sausage used in this specific casserole-dishrecipe.

Ingredients:

1 lb. pork sausage
1 chopped medium onion
1 chopped green pepper
2 grated carrots
3 cups diced potatoes
½ cup grated cheese
Salt and Pepper to taste

In a skillet over medium heat, cook your sausage adding a little salt and pepper as you see fit. Next you’ll want to place all the ingredients into your casserole dish, with the potatoes layered on the bottom.  Cook in the oven for about 20 minutes, or until the potatoes begin to soften.  In the last few minutes, sprinkle grated cheese on top and cook until melted.

Perfect Burger Tips

1) Be sure your ground meat is fresh. It should be bright pink without any unpleasant odor or dark spots.
2) Make use of kitchen gadgets such as a turner (i.e. spatula) or tongs when turning burgers to help retain their shape.
3) Avoid overmixing ground meat because it becomes tough with handling.
4) Grill ground beef burgers over high heat to sear the outsides and seal in their juices.
5) Since it’s the fat that gives burgers their natural juiciness and flavor, when using extra-lean meats, add moist ingredients for juiciness, extra seasonings for flavor, and grill them more slowly over medium heat.
6) Avoid pressing down on the burgers while they’re grilling; this squeezes out the juices and makes them dry and tough.
7) Never cook burgers to the point of dryness, but be certain they are fully cooked. The meat should show no signs of pinkness inside, the juices should run clear, and the temperature should register 160 F in the center.

kitchen-gadgetsWhen I have a house full of hungry holiday guests coming over, I need all the help I can get. During the holidays everyone is busy doing their own thing, so it’s hard to find a reliable “assistant” in the kitchen. Luckily, I can always count on my vast assortment of kitchen gadgets to be there when I need them.

I have a “gadget” for just about everything imaginable and boy do I need them! Most of them are so common we think of them as kitchen “essentials” not luxuries. Lets see, there’s my can opener, paper towel holder, utensil set, ice cream scooper, pizza cutter…good grief! The more i think about it, the less I can imagine living without these little “miracle workers” - they save loads of time and energy, allow me to entertain a large number of guests, and STILL maintain some semblance of a life. I love my little kitchen gadgets!

gfEveryone enjoys holiday food -  the cookies, cakes, casseroles, ham, the list goes on and on. Unfortunately our love of holiday food doesn’t always equate to healthy weight maintenance. I’ve found it’s perfectly OK to enjoy a few “guilty” holiday pleasures (i.e. sweets, pastries, and even candy). The trick is moderation; you simply balance out the naughty treats with healthy eating. The “health” food doesn’t need to taste bland either. With a little creativity, good recipes, and the right kitchen gadgets you may end up preferring the healthy food over the sweets!

When it comes to making healthy food that tastes great, the George Foreman grill destroys the competition. I’ve always savored the taste of grilled food but never had the time or knowledge on how to cook it the right way. With the George Foreman grill, I can easily get the flavor that only a large grill can offer and with all the convenience of an easy to use and solid design. Even though I rarely have the time or patience to cook, I find this grill to be a breeze. Its the perfect combination of health, taste, and ease of use.

mandoline-slicerIf you want to impress your guests this season  (and who doesn’t?!), boy do I have a recipe for you! It’s the perfect entrée for an elegant holiday dinner party, and it’s so good, just talking about it makes me hungry: truffle-scented wild mushrooms, roasted tomatoes and mild fontina cheese are layered between puff pastry in this savory dish. The key is in preparation - skillfully using a mandoline slicer will turn this dish into an absolutely stunning presentation.

Wild Mushroom Delight with Sliced Tomatoes (Ingredients):

* 2 sheets frozen puff pastry dough (1 pound), thawed for 10 minutes
* 1 egg, beaten
* 3/4 pound ripe tomatoes (about 3)
* 3 tablespoons extra virgin olive oil, divided
* Salt and freshly ground black pepper
* 1 tablespoon butter
* 3/4 pound wild mushrooms, any combination (i.e. cremini, shiitake and hen of the woods), cleaned and thinly sliced
* 1 teaspoon truffle oil (optional)
* 4 ounces fontina cheese, sliced

Preparation:

1. Preheat oven to 400˚F. On a lightly-floured surface, roll puff pastry dough to 1/8 -inch thick. Use a metal biscuit cutter to cut dough into 6 rounds, about 3 1/2 to 4 inches in diameter. Transfer rounds to a parchment-lined sheet pan and brush each round lightly with beaten egg. Bake at 400˚F for 12 to 14 minutes until golden brown. Remove from oven, let cool.

2. Using a mandoline slicer, slice tomatoes into 1/4-inch slices. Place tomato slices on a parchment-lined sheet pan and brush lightly with 2 tablespoons of olive oil, then sprinkle with salt and freshly ground black pepper. Bake at 400˚F for 15 to 20 minutes, until tomatoes are soft. Remove from oven, let cool.
