Here is a delicious recipe for a pumpkin pie inspired flan; a unique variation on the holiday favorite! In addition to the ingredients, you will need a saucepan, a blender and a flan pan. Ingredients:
1 cup pure cane sugar
1 can pumpkin pie filling (14 oz.)
1 can evaporated milk (12 oz.)
1 can sweetened condensed milk (5 oz.)
1 tsp. vanilla
1 tsp. allspice
6 eggs
Directions:
Preheat your oven to 375 F, and melt ½ cup of sugar (not all of it!) in the flan pan over medium heat. Continue to cook until it caramelizes, being careful not to burn it. Heat up a large saucepan with about an inch of water in the bottom, and move the flan pan into the saucepan. Combine the pumpkin pie filling, milks, eggs, remainder of the sugar, vanilla, and allspice in a blender, and blend until smooth. Pour the mixture into the flan pan when done. Bake in the preheated oven until a knife inserted into the center comes out clean (often about an hour). When done, refrigerate for 3+ hours. Serve with whipped cream or fresh fruit!
My Latina mother-in-law cooks the best traditional Mexican food around. Esquites con Chile, Pumpkin Soup with Mexican Sausage, and fajitas - you name it, she makes it (and makes it well). Sundays my wife and I usually go over for a traditional Mexican feast with the in-laws. After the meal, I could swear I have no room for dessert, but no matter how full I am, there’s always room for her refreshing, delicious flan. If you’ve never made flan before, now is the time to try it.
Mama’s Easy Flan Recipe (Ingredients): 6 eggs, 1 liter milk, 2 teaspoons vanilla essence, and 1 and 1/2 cups of sugar.
Directions: First you should make the caramel - Put 50 grams of sugar and a bit of water in a flan pan, and put it over fire until the sugar melts and goes brown forming caramel. Then let it cool down. Mix the milk, the sugar, and some vanilla essence. Then add the eggs beating until they mix, and put the mixture in the flan pan over the caramel. Put the pan in the oven with the fire set to medium. It will be ready when you can introduce a knife in it and it comes out clean. Let it cool down and then put it in the fridge until is very cold.
Flan has always been one of my family’s favorite treats. The smooth, soothing caramel custard makes the perfect finish to any hearty, spicy, intensely flavored main course. Flan is a staple in many Mexican restaurants, but it is more; it is an elegant, rich dessert that can be adapted to almost any occasion.
Although flan can be prepared in a microwave, authentic flan is prepared in a special flan pan (mold) over a bain marie (water bath). Great flans are not as simple to make as instant pudding or jello, nor would not want them to be. Your time, effort, and the right flan pan is part of what makes flan unique, a treat to be savored whenever the opportunity should arise.
