non-stick-panMy family is from the south, and we have a tradition of cooking up the heartiest of southern ’soul’ food. This holiday season nothing is more ’soulful’ than mama’s Mouth Watering Beef Stu. It warms our hearts and fills our bellies on the coldest of winter days!

Mouth Watering Beef Stew (Directions): Heat a large frying pan over medium high heat with a little olive oil. When pan is hot, add stew meat in batches so as not to overcrowd pan. Sprinkle with salt and brown on all sides for 3-4 minutes per batch until a medium dark brown crust forms on the meat. Place meat in a crock pot, and deglaze hot pan with 1/2 cup wine. Scrape bottom of pan to loosen brown bits. Empty pan into crock pot, add all remaining ingredients, including the remaining wine. Crush bouillon cubes before adding. Stir just to combine all ingredients then cook on low 8-9 hours.

Ingredients
* 3 lbs venison cut into 1 1/2 pieces
* Olive oil
* Salt
* 2 medium yellow onions, rough chopped
* 1 14.5 oz can diced tomatoes, drained
* 2 cups dry white wine
* 2 chicken bouillon cubes
* 1/2 cup Dale’s sauce
* 2 tablespoons ground rosemary
* 2 teaspoons cumin
* 2 teaspoons rubbed sage
* 2 tablespoons minced garlic
* 1 packet brown gravy mix

* Score the fish on both sides with a knife
* Heat a pan and add a touch of olive oil, once hot, add the fish and cook for 3-4 minutes until golden on one side.
* Turn the fish over and add in the garlic, chilli, tomato, olives and seasoning.
* After 30 seconds add in the mineral water and the butter & basil and cook for a further couple of minutes.
* When the fish is cooked transfer to a serving plate.

non-stick-panIf you modify your favorite holiday recipes to make them healthier, you can enjoy the festivities without gaining weight. You can modify just about every recipe to suit your lifestyle and taste preferences. A “tired” palate needs to be revived by substituting new spices and flavors (and less sugar and fat!). Your palate can get used to anything. By simply omitting or limiting salt, fat, or sugar from your recipes (and even replacing them with healthier alternatives) you will liberate liberate your taste buds and improve your health.

To ensure a successful commitment to healthy (but scrumptious!) eating, I make sure to stock the right tools. Nonstick frying pans pans are great for healthy cooking. The same goes for a quality skillet, baking sheets, bread pans, and roasting pans. Used correctly this cookware will allow you to add little to no fat to the recipe. Add a little seasoning, and you’ll wonder why you waited so long to eat low fat and healthy! So now if someone asks me if I can have my cake and eat it too, the answer is a resounding YES!!!

frypan2After Thanksgiving (and AGAIN after Christmas), our refrigerator is bursting with leftover holiday food. This year I have a game plan: use the tasty holiday leftovers to make an ultra-delicious omelet . Of course, my brilliant idea was inspired by the fact  there’s going to be nothing else except holiday leftovers to work with. Not that I’m complaining though, I love Thanksgiving  turkey and Christmas ham!

Holiday Omelet Recipe (Directions): Beat eggs in a bowl with salt, pepper and celery leaves, heat oil in a non-stick frying pan over medium heat. The amount of oil varies on how non-stick your non-stick frying pan is. Pour the egg mix when the oil is hot. Swirl it around the pan until it covers the entire pan. Let the eggs cook for a while. When the eggs has cooked a bit, swirl the pan again. When the top of the egg is fairly dry, put your filling on one side of the omelet , leaving space on the edges. Flip the other end of the omelet to cover the fillings. Continue cooking for 10 more seconds then serve.

Ingredients: 3 medium eggs, pinch of salt, freshly ground black pepper, 1/2 tsp chopped celery leaves, filling of your choice, oil (optional)

frypan1Thanksgiving & Christmas are right around the corner, and this is one traditional holiday recipe that shouldn’t be missing on the buffet table. You can also to add a delicious twist to this recipe with my Festive Holiday Option!

Holiday Classic Green Bean Casserole w/Festive Holiday Option

1. Preheat oven to 350 degrees F. Spray a large 9 X 13 inch baking dish with vegetable spray. Festive Holiday Option: Make this easy holiday casserole even tastier by adding cooked bacon, mushrooms and red peppers. Simply cook 4-6 ounces of bacon in a small frying pan , remove and set aside, reserving 2 Tablespoons bacon fat. Slice 4-6 white button mushrooms and dice 1/2 red pepper, and sauté in the reserved bacon fat until tender. Set aside until ready to mix with other ingredients; continue with the recipe as directed.

2.   In a large bowl with a rubber spatula, mix green beans, cream of mushroom soup, sour cream, milk and Worcestershire sauce together. Fold in 3/4 cup of French’s French Fried Onions, and pour into the prepared pan.

3. Bake at 350 for 20 minutes, remove from oven, and sprinkle the remaining French’s Onions and cheese evenly on top. Return to oven and continue baking for an additional 10 minutes or until hot and bubbly. Let cool for at least 10 minutes before serving. Serves 10-12.

frypanEver since I was a child I’ve loved the taste of McDonald’s hamburgers. In my family, there is nothing more American than a juicy burger with all the fixings and a side of fries! As an adult, I’ve learned you don’t have to go to your local burger joint to enjoy great burgers. With a little trial and error, I’ve perfected my own recipe for this great American classic at home.

I actually prefer to cook my beloved burgers using frying pans. Bad weather can always put a damper outdoor on grilling but I can always pan fry my burger indoors. Many people don’t realize that pan frying actually gives the burger a nice, unique flavor, making it a delicious alternative to the grill.
